How does the Day-of-the-Week Affect Restaurant Sales?

According to a recent research survey of over 240 restaurants across the U.S., 50% say that sales drop by 20% or more based on what day of the week it is. 20% of sales represents a staggering figure when one plots out the loss of potential revenue over the course of a year. For the average restaurant it represents $31,200 annually, for larger restaurants doing more than a few million in sales it will total greater than $200,000 in lost potential sales.

The day-of-week is one among several key factors that regulate a restaurant's sales. Other factors include weather and seasonal changes.
